Imanishi
We produce sake rice in cooperation with local farmers; this rice, grown by the sweat of our brows alongside farmers in the terraced rice fields of Asuka and the mountain regions is used by our young chief brewers to carefully brew sake by hand, from creating the mold to placing it in stock. These regions, with major temperature variations, are suitable for raising ideal sake rice variations such as tsuyubakaze and yamada nishiki, and the bright, smiling faces of all the farmers show that the pleasant intoxication from this junmai-shu, made with lots of rice, is a satisfying, heart-lightening time of abundant bliss in the middle of their brutal daily lives.
